    this is my favourite place in the garden at the moment [​IMG] so thought I would share it :D

    Hows the grapes do, do you get many and what variety is it.
    all looks very rustic ooaarr. ;)

    :D Hi Pete, I suppose it does look a little rustic now you mention it [​IMG] I planted the vine about 27yrs ago, I can't remember anymore what it is called but I have to say it fruits prolifically every year, I limit the bunches to one per stem & cut the rest out. They ripen well most years. They make avery nice fruity, but dry red wine which if left becoms quite heavy, veeerryyyy niceeeeeeeeee ;) :D :D I usually fill one demijon each year :D Have to get the old birch tree trimmed back again though as it is taking the sun away again :( :(

    You'll have to try birch sap wine, not tried it myself but apparently its pretty good.

    [​IMG] Not heard of birch sap wine but I did make some parsnip wine once that was more like wood alchohol. :confused: :confused: [​IMG] :D

    Apparently, you bore a hole into the trunk of the tree in spring when the sap is rising, collect a gallon of sap and plug the hole with a cork. Doesn't hurt the tree they say as long as you plug the hole.
    Had a recipe once, but seem to have lost it.

    Birch sap wine was Henry VIII 's favourite tipple I have read. I have made lots of different wines myself, one of my favourites was Banana wine.

    To make Birch sap wine, you need to bore a 1/2" hole into the bole and insert a 1/2" diameter plastic tube, which goes into a demijohn or bottle, not sure of the quantity of sap needed, but have always wanted to try making it.

    I did a job recently for a Greek chap who makes wine the 'Greek' way as he put it, slightly different slant on the fermenting process, but sounded a good way of making wine.

    Unfortunately not .... Thats why I haven't tried making it yet. Was going to hide a pipe on a council tree, but didn't dare to be caught, plus the fact that yobs may pee in it as well .
