My sweet potato has started sprouting!

I've had a sweet potato sitting in water for many months in the hope that it would start sprouting, and it did nothing. Then recently I went away for 10 days and when I came back to my amazement not only had it grown loads of roots, it had leaves (slips) of over a foot long.

I was wanting it to grow slips before the summer but what can I do with it now that it is October?

 

Mayby you should pot them up and grow it inside untill next year,
but I dont know, I dont grow them.

 

Not sure it will grow well during winter, not enough natural light.

Think I would remove one of the slips and try growing on in a window sill, just out of interest.

 

Seeing as it's done it anyway you have little choice but carry on!

Do you think it has responded to shortening day length?
