oven omelet

    i make this a lot and have it with chips or just on its own as a snack

    after sunday dinner as been served keep any cooked veg that is left over also any cold meat
    not mash or any think like that just firm veg

    1 cut all veg up to bite size bits and place in ovenproof dish
    2 add herbs and spices of your choose
    3 whisk 6 eggs with a cup of milk and pour over veg to cover
    may need to add more eggs depend on size of dish
    4 place in oven gas 4 180c and cook till set
    5 remove from oven and grate cheese over top and add slices of tomatoes
    and place back in to oven till cheese as malted and golden brown
    serve hot with chips or as a snack on its own

      Sounds nice, we will give it a go next time we have veg left. We usually do some mash and have bubble and squeak this will be a nice change.
