    Anyone got a good recipe for Pancakes :please:

      A crepe recipe from a patissier friend: 150g plain flour, 50g cornflour, 1 pinch salt, 1 tbsp baking powder, 4 tbsps sugar, 3 tbsps oil or melted butter, 15cl water, 15cl milk, 4 eggs, vanilla essence, grated lemon rind and 4 tbsps rum (optional). Mix the dry ingredients with the oil or butter and eggs. Gradually add the liquids until the batter is smooth, then add the lemon rind. These pancakes are good to eat even without anything on them!

        I do mine by eye, @Spruce but it roughly 4 heaped dessertspoons of plain flour, an egg and then roughly 1/2 pint of milk.
        Put flour in a bowl, make a well in the centre and add the egg. Whisk just the centre where the egg is (the flour will naturally fall into it through the whisking) and as the flour is incorporated start adding the milk to thin the mixture. Should have a consistency of ordinary double cream (not your extra or extra-extra thick double that they sell at Christmas time).

        Heat a pancake pan (or small frying pan) at a high temperature then add a dash of oil. To get thin pancakes you put a generous blob in the centre of the pan and then tilt the mixture in the pan until it covers the base. You will see the top of the pancake change from a yellow colour to a drier, pale cream colour and then see the edges begin to turn brown - this is the point you can flip it (if you have the wrist action) or, toss it with a fish slice or palette knife.

        Only takes a minute or so because you work with a hot pan (open your kitchen window for ventilation though or you'll get steamy windows).

        If you are making a batch, heat your oven to a low temperature and stack your pancakes as you go on a heat proof plate and cover with foil until all the pancakes are cooked.
