Paprika-Tomato-Chutney

    Paprika-Tomato-Chutney - makes a good 1 kilo

    1 red & 1 green paprika
    500 g tomatoes
    250 g onions
    200 g brown rock sugar (I used the regular brown sugar this time with equally good results)
    50 g sultanas

    4-6 tblsp vinegar )
    12-14 cloves )
    1 tspn salt )
    1/2 tspn paprika powder ) all to taste
    1 tbsp mustard seed )
    8-10 peppercorns )
    1/4 tspn cayenne pepper )

    - remove seeds & white pith from paprika, chop
    - scald & skin tomatoes, chop
    - peel onions, chop
    - mix veggies together with the sugar & seasonings
    - bring to the boil then lower to a slow boil for about 30-40 minutes, stirring often, until fairly reduced
    - bottle hot in twist-off top jars

    TIP do not make up more than a double batch at one time, it takes too long to reduce and only fills your kitchen walls and ceiling with condensation. I know from experience.
