I purchased two parsley plants from the herb section of our local supermarket today. The advice on them were to put them on a sunny window ledge etc etc.
Can these plants be transplanted into larger pots or will they resent being moved.

I thik you will have no trouble potting them up into a larger pot, as there should be very little root disturbance. Do they also need splitting or is there just one plant per pot?

parsley has long roots like a carrot, but a bit thinner, they seem to get quite long, so you need long pots, the question would only be are they sown this year or are they in their 2nd year, which will make them flower(at least outside, dunno about indoors)
my plants didn't mind replanting them to another location, so you should be fine
