Passion flower fruit

    Does anyone have a recipe for these fruits please. I have been inundated but havre no idea what to do with them - if you know what I mean! [​IMG]

    I have found this information for you so after reading it i guess you just make jam etc in the normal way but using the passion fruit..i suppose you could add things like pineapple to give it extra taste..I too have loads of passion fruits but mine are in the front garden and their is a lot of traffic fumes so i cant use them..

    The orange, egg-shaped fruit of Passiflora incarnata is edible, although it is not as tasty raw as the purple fruiting variety Passiflora edulis, sold in shops and supermarkets. The purple passion fruit has a wonderfully fragrant pineapple-orangey scent and makes refreshing fruit sorbet and drinks, either on its own or when added to other fruits such as the mango. Passion fruit can be made into jams, chutneys, syrups, jellies and puree, which makes an excellent filling for cakes. It is also a good source of vitamins A and C, and potassium.

    PASSION FRUIT FOOL...

    12 passion fruits
    284ml/10fl oz tub double cream
    100g/3�½oz icing sugar
    1 lemon, juice only
    2 tsp Malibu or coconut rum


    Method
    1. Cut the passion fruits in half, scoop out the pulp with a spoon and place in a bowl.
    2. Gently whisk the cream in a large bowl and place in the fridge, along with four glasses.
    3. Sieve the icing sugar into a bowl, and set aside.
    4. When you wish to eat, whisk the icing sugar into the cream with the lemon juice and coconut rum.
    5. Fold in the passion fruit pulp and pour the fool into the chilled glasses.
    6. Serve with biscuits of your choice.

    APPLE AND PASSION FRUIT CAKE..

    Ingredients
    175g/6 oz unsalted butter or margarine
    175g/6 oz dark soft brown sugar
    2 medium eggs
    200g/7 oz wholemeal self-raising flour
    1/2 tsp baking powder
    50g/2 oz white self-raising flour
    2 diced Bramley apples,
    (300g/10 oz peeled weight)
    2 ripe passion fruit
    75g/3 oz pecans, roughly chopped
    For the Icing:
    225g/8 oz soft cream cheese
    100g/4 oz icing sugar
    1 ripe passion fruit
    25g/1 oz pecan halves


    Method
    1. Preheat the oven to 180C/350F/Gas 4. Cream the butter or margarine with the soft brown sugar until light and fluffy.

    2. Beat the eggs then gradually beat into the butter/margarine and sugar, adding a little flour after each addition. Sift the baking powder and fold into the mixture together with the wholemeal and white flour.

    3. Cut the passion fruits in half and scoop out the seeds. Stir the diced apple, passion fruit seeds and chopped pecans into the cake mixture. Stir in 1-2 tbspof cooled boiled water to give a soft dropping consistency. Spoon into a lined 8 x10 inch cake tin and bake for 40 minutes

    4. For the icing, cut the passion fruit in half, scoop out the seeds and press them through a sieve, extracting as much juice as possible. Beat the cream cheese until creamy then beat in the sifted icing sugar, together with the passion fruit juice until a smooth icing is formed.

    5. When cold, spread with the prepared icing. Swirl the icing decoratively over the top and decorate with the pecan halves. Serve the cake cut into squares.

    I know that this is not the right thread to ask in but since the talk is about passion fruits I will ask here.

    Our passion fruit, planted 2 years ago in a bed in our Wintergarten, grew and bloomed like mad this year and lots of fruit appeared - but every one was hollow! Does anyone have an idea of what we did wrong or forgot to do?

    Kedi, what was the species of passiflora that you grow?
    Edulis is the usual fruiting one that we buy in the supermarkets, the hardiest is probably caerulea, (the blue flowered one) that is not really considered edible, although I dont think its poisonous as such, just not that tasty.
    Perhaps it could be something to do with poor pollenation, that could cause a fruit to form, with no proper seed inside.

    Pete - have just come back to this thread.

    I don't know what species we have, only that it is a blue-flowering sort.
