Pickling Beetroot?

    Hi everyone, not sure if this is the right place to post but I was wondering if anyone could tell me how to pickle beetroot? I've got some left over and I don't want it to go to waste. Is it as simple as cooking it and putting it into an air-tight jar with vinegar (is there a specific kind of vinegar for this purpose?) or is there something more to it? Thanks in advance :D

    Beetroot is a much underated vegetable as far as I am concerned Freedom, I love to roast them and serve them as a vegetable in their own right..


    Pickling beetroot couldn’t be simpler. Take some fresh beetroots, give them a wash and boil until tender, about twenty minutes or so. I keep checking them with a knife periodically because I want them to retain some texture but it’s up to you. Once cooked remove from the water and leave to cool slightly. The skins will peel away quite easily.
    Whilst all of this is going on I get a saucepan and bring enough malt vinegar to cover the beets in the jars to the boil. Add a cinnamon stick, three or four cloves, about 10 Allspice berries, some peppercorns, a couple of dried chillies and a sprinkle of coriander seeds. Let it boil, whisk in some brown sugar (not essential but I like it) to take some of the acid bite away then leave to cool. Once cool, strain the vinegar over the beetroots which are now sat snuggly in a sterile jars.
    Seal and wait 3 weeks.. :sunny:

      Worth doing, i'm still using jars from last year & still have loads of beet in the ground. One Ziglet will eat it roasted but the other will only eat it pickled:DOH:

      Have you tried fresh beetroot juice Zigs./ I think it is to die for but one glass in a day is all you need... :heehee:
      My basic Beetroot juice recipe Barbara in Jamaica gave to me..
      2 Beetroots
      2 Carrots
      1 Apple
      1 Orange
      A good 1/2" piece of fresh Ginger

      Honestly Zigs it is a lovely way to start the day.. :sunny:

      My beetroot never lasts that long in our house. I just boil, cool, peel then pour over 1 normal sized malt vinegar. and leave the best bit is the bowl i put them in is slightly bigger than it should be so we get some that are heavyly pickled and some that get just a splash. Me myself will eat all the ones on top then i eat no more as i'm not a great lover of pickled beet.

      As Marley says, but with a Potty tip, put the beets in the jar/s after cooking, skinned, and sliced if your not doing baby whole ones, then add the vinger to the top, then pour the liquid into the pan for heating, this way you get the correct amount of fluid, less waist n all:WINK1:

      I tend to chuck a pinch of the strianed peppercorns in each jar with a few sprigs of of herb, you can pick the sprigs off the top when you first open, they infuse n it tastes fantastic:)
