I had a parsley plant i got from tesco, which i potted up. I had it in the same trough as a mint plant. Both watered from below, and the parsley seemed to wilt, but i think it just got heavy from taking up so much water.

Actually this taking up so much water and it dropping has just made me realise what has happened. Is it that its taken on so much? I always water from below, a habit thats really worked for me.

Which herb takes up the same amount of water though as parsley? coriander?

Plants stop taking on water when they dont need it. If you keep giving it water then the roots rot as it is in too much water or it drowns
