Plum Jam

    Plum Jam (makes about 2.5kg/5lb)

    1.4kg / 3lb Plums
    450ml / 16fl oz Water
    1.4kg / 3lb Sugar
    15g / 1/2oz Butter

    Put the plums into a large saucepan with the water. Bring to the boil then simmer for 45 minutes, stirring occasionally until soft.

    Warm the sugar and butter and add to the pan and stir over a low heat until the sugar has completely disolved. Bring the mixture to the boil and boil rapidly for about 10-15 minutes, until setting point is reached. Use a slotted spoon to remove any plum stones as they rise to the surface.

    Pour the jam into warmed jars, cover, label and store.

    LoL, I love plum jam and I ususally make 10 - 15 jars each year using Victoria Plums, my favourites.

    I use 4 lbs Plums to 2 lbs sugar. Takes a bit longer to get to setting point but is a reduced sugar jam more suitable for me to have a little now and again on my diabetic diet.

    Hoping to get to the PYO farm down the road sometime soon to see if the Victorias are ready yet.

    Help required re my plum jam not setting please!

    I have made my first batch of Victoria Plum jam and very diappointed that it didn't set properly.
    So I added liquid pectin (Certo) and followed instructions but checked this morning and it still isn't set properly.

    Can I re-boil again and should I add more pectin?
    I don't usually have any trouble with getting it to set although I reduce the amount of sugar in the recipe. [​IMG]

    Mrs.DAG said that you can boil it again, and add a little sheet gelatine, but you may not have boiled it quite enough the first time! ;)

    Dag, please tell Mrs Dag thankyou for the advice. I will add gelatine to my shopping list and re-boil the jam this afternoon. [​IMG]

    you have to find out where you went wrong JJORDIEdid your hand slip on the ingredients, sorry to here it did not set.

    Thanks Fancy. All ok now. Reboiled it and added a bit of gelatine as Mrs Dag suggested.

    Now have 12 jars of lovely Plum Jam to last me until next September [​IMG]
