Pork wraps with "West Indian Apple Sauce"

    Knocked this up before I went to bed last night.

    Take one scotch bonnet, two garlic cloves and two shallots and chop roughly. Put in a frying pan with a little sunflower oil and sauté. Add a splash of cider vinegar, a pinch of salt, a few scrapes of palm sugar and a wee bit of water and simmer for ten minutes before blitzing in a food processor.
    Chop three pork loin steaks into 20mm'ish pieces and place in a container with the chilli paste to marinade for a while (overnight).

    This evening I roughly chopped two medium apples and "cooked" in the microwave (add a little water to stop it drying out) and then mushed it up.
    Remove the meat from the marinade and put the marinade in a frying pan, add some small pieces of red pepper, a desert spoon of black treacle, the mushed apple and half a medium onion thinly sliced. another splash of water and simmer this lot for five to ten minutes (add water if needs be to keep it at the consistency of a tomato sauce for pasta). Add the pork and continue to cook until the pork pieces are cooked through (five to ten mins). Remove from the heat and stir in a desert spoon or two of double cream.

    Serve by putting the meat mixture in tortilla wraps with some of the sauce, some cucumber, grated cheese and salad leaves (I always prefer rocket). Serves three.

    THIS WAS AS HOT AS HELL, but not so hot as to lose the flavours! Just right for me, but if you prefer use less chilli, and/or remove the seeds. But DO use scotch bonnets, their flavour is essential!

      Just edited it as I forgot the black treacle. I really must write these things down when I'm playing around in the kitchen!

            In all seriousness, can you still buy veggie sausages? The Linda Macca ones were ok with enough Colemans as I recall.
