Potato and Corn Soup

    Ingredients
    2 large potatoes, unpeeled, diced
    2 cups chicken broth
    2 bay leaves
    1 tablespoon butter
    1/2 cup chopped onion
    1/2 teaspoon cumin seeds
    2 cups corn kernels (frozen can be used)
    1 tablespoon plain flour
    1/2 cup heavy cream
    1 cup grated cheese
    1 tablespoon chopped chives and parsley
    1/2 teaspoon salt
    ground black pepper

    Instructions
    Boil the potatoes and bay leaves in chicken stock until tender.

    Saut�© the onions and cumin seeds in butter. Add these to potatoes and chicken broth.

    Reduce heat and add the corn.

    Mix flour and cream until smooth, then slowly add to soup, whisking vigorously.

    Add cheese a little at a time. Keep the heat low and stir continuously turning from the bottom of the pot until the cheese has completely melted.

    When all cheese is melted add the chives and parsley, serve and enjoy!
