I plant first-early seed potatoes in August to have new potatoes for XMas :)

They'll need more water, in mid Summer, than they would if you planted them in Spring, and you run a greater risk of getting blight (normally 1st early are harvested by the time that Blight becomes prevalent), but that's it.

"First Early" only means that they take fewer weeks from plant-to-harvest than Second Early, and fewer still than Main Crop ... but that's the only difference, the name "Early" certainly doesn't mean that you have to plant them early :)

For main crop wait until plant is dying down. No rush if you want them for storage as you want to maximise the crop and let it mature (although beware of Blight if leaving the crop to mature). If you want to dig some for lunch, meantime, then you should be fine after flowering - although not all varieties flower always.
