Preserving cucumbers

    Is there a way to do something with a glut of cucumbers? We got two carrier bags full off our plants yesterday, and whilst I am giving a good few of them away, I am wondering if there is anything else we can do with them?

        Hmmmm... I am allergic to them, so the wine idea probably isn't suitable; pickling is a maybe, but I would need tons and tons of jars and loads of pickling vinegar... would they need to be whole, or could they be chopped up before pickling?

        Slice thinly and interleave with slices of onion in jars of vinegar. Just great on a cheese sandwich!

          Mmmm pickled in a sweet pickle vinegar, with chillies, lots of recipes on t'interweb.

              Another way to use them, rather than preserve them is to make tzatziki - yoghurt, cucumber and garlic dip. Stacks of info about how to do it on the www. It's very easy and if you like yoghurt and garlic very tasty.

                I have given the vast majority away, with a load going to our works canteen :)
