preserving mushrooms in oil:)

    mushrooms in oil

    ingredients
    450g mushrooms,sliced or left whole if small,wipe away any soil or grit,but do not wash.
    2tbsp cider vinegar
    1tsp thyme leaves
    sea salt & ground papper
    150ml extra virgin olive oil.

    1.Put the mushrooms in a pan of boiling salted water & blanch for 3 mins.then drain well & put to one side to cool completely.
    2.Mix the vinegar with the thyme in a small bowl & season well with sea salt & pepper.then toss the mushrooms in the flavoured vinegar to coat them.
    3.spoon the mushrooms & flavoured vinegar into a sterilized jar with a non-metallic or vinegar-proof lid.pour in the olive oil to cover the mushrooms,& seal.give the jar a shake to make sure its all mixed together. once opened,keep refrigerated,top up with oil if necessary so the mushrooms are allways completely covered,& use within 1 month:dbgrtmb:

    Hi Rachel: that recipy sounds very familiar (aside from the thyme, I think that my mother would use a different spice). What mushrooms do you have in your area. Do you also have Boletus Edulis?

    Hi! We have loads of mushrooms up here,ah the good old cep yes we do,i luv them! yum!We get all the types of blolete up here:yay: I collect parasol,field,blewit,blushed wood,inkcap,puffball,milk cap,chanterelle,hedgehog,jews ear & russula.I would luv to find morels ive never tryed them.
