Last year we planted some lovely Fushias and at the end of the season my wife was ready to put them in the recycling but I purloined them and moved them elsewhere. They are now leggy and woody. How should I go about pruning them or should I do what she had originally intended?

You can cut them back as far as you want because they can sprout from ground level or below. Or better still you can cut them to a growing bud.
I have Fuchsias that are over 30 years old so don't throw them away, they are long-lived plants. M
y late partner and I used to collect them and we once had well over 100 different varieties.
They are also easy to take cuttings of.
Sometimes I even push the pruned sticks in the ground and they root.

With mine, I wait until they show signs of growth and then prune them depending on where the shoots are coming from. I remove anything that is non shooting, spindly, or growing in the wrong direction. I reduce the height by cutting back to a strongly growing bud/shoot.
