Should I removed these dead leaves from our pumpkin plant? Hubby didn't water it when I was away for almost a week :(

Also now it appears to be actually growing a pumpkin (yey!) Should I be doing anything to help growth? Fertiliser?

Yes remove the dead leaves to let more sunshine through.

Water and feed are essential for pumpkins, I'd be inclined to sit your pot in a tray to stop it drying out so quickly. Feed a couple of times as week with tomato feed at the rates given on the bottle.
