Pumpkin recipes

    Ingredients:
    1 Pumpkin, cut into sections.
    To taste Black Pepper
    1/4 stick Butter



    Preparation Directions:
    Preheat oven to 425 degree.
    Cut pumpkin into sections.
    Lay pumpkin on a piece of foil.
    Add a couple pats of butter and lots of pepper.
    Wrap sections in foil and cook until tender.
    Scoop out and serve or mash.

    Pumpkin soup..
    Simple Pumpkin Soup

    1 or 2 onions
    3 tbsp. butter
    1 pumpkin
    1 tsp. salt
    1 tbsp. sugar
    1/4 tsp. nutmeg
    1/4 tsp. ground pepper
    1 litre of water
    chicken or vegetable stock cubes
    1/2 cup cream.

    Chop the onions and gently brown in the butter in a pan. Put chopped pumpkin into onions in pan with the salt, sugar, nutmeg and pepper. Slowly add chicken broth and heat thoroughly,until all the vegetables are soft you can blend it if you want a smooth soup... To serve, pour into a tureen and add the cream. Makes 4 to 6 small servings.

    p.s you can also put a spoon of mixed herbs in..

    P.s you can add lots of different things to your soup i add leeks and carrots and i dont add the cream.. :(

    pumpkin seeds .... extract seeds from pumpkin.. Separate and discard pulp.
    Thoroughly wash seeds in warm water.
    Spread seeds out onto a baking tin Sprinkle generously with salt.
    Put into oven and bake at 350 degrees for approximately 20 minutes.
    Check every five minutes and stir, adding more salt or to taste.
    Check seeds to see if they are done by taking a sample out, allowing to cool and tasting. If the insides are dry, they are done.
    Allow to cool and serve.

    Flavor Variations:
    There is no rocket science required here. You can make as many different flavors of pumpkin seeds as you can imagine. Replace the salt from the recipe above with the suggested seasoning. Here are some we suggest you try:

    Cheesy Pumpkin Seeds- sprinkle with Cheesy popcorn seasoning.
    Tex-Mex Style- Sprinkle powdered Taco seasoning onto the seeds. This is better mixed in a bowl first. Add more red pepper powder for a really hot seed!
    Cajun style- Mix seeds in a bowl with a packet of cajun seasonings mix. If you like it really spicy, add extra hot sauce.
    Garlic Salt- yum!

    Pumpkin Muffins...

    1 cup Fresh or Canned Pumpkin
    3 1/2 cups Flour
    1 cup Sugar
    2 Eggs
    1 1/4 cup 2% Milk
    1/4 cup Soft Butter or margarine
    1 cup Raisins
    4 teaspoons Baking Powder
    1/2 teaspoon Cinnamon
    1/2 teaspoon Nutmeg
    1/2 teaspoon Salt

    Preparation Directions:
    Preheat oven to 400 degrees.
    Put muffin cups into muffin tins or grease the tins.
    Cream butter(or margarine) and sugar until fluffy.
    Beat in pumpkin and eggs.
    Dredge raisins in 1/2 cup of flour.
    Sift remaining flour and spices together.
    Pour milk into a mixing bowl.
    Mix in dry ingredients by hand until just mixed.
    Stir in raisins.
    Spoon mix into paper cups in muffin tin.
    Bake at 400 degrees for 20 - 25 minutes.

    Thanks for the recipes Wildflower,I will show them to Mr Kandy.Looks like Mr Kandy will be eating pumpkin well into the new year 2008 :D :D

    Pumpkin tastes lovely i made a lovely pumkin soup today with organic leeks and carrotts in it and it tastes divine..and just think of all the goodness :D :D

    great muffin recipe, i will try that cuz we had some at the pumpkin competition and they were gorgeous [​IMG] [​IMG] [​IMG]

    cheers for that one! :D
    i usually roast mine in oven with tons of garlic or make into a pumpkin chilli(with loads of other veg and loads of chillis).
    would love to make a proper pie as well though.

    Rudy..They look lovely ..you have done a good job on them..I like cooking and baking but when it comes to the icing well i am absoloutely useless at it i dread icing my xmas cake.. [​IMG]

    Spicy Pumpkin Cookies

    Description: Ginger and a few other ingredients adds a spicy zip to these cookies.

    Yields: About 2 and 1/2 dozen.


    --------------------------------------------------------------------------------
    Ingredients:
    1 /4 cup Soft Butter or Margarine
    1/2 cup Light Brown Sugar
    1/2 cup Cooked, strained Pumpkin(or canned)
    1 Egg
    1cup Flour
    1/2 cup Raisins
    1/2 cup Chopped Almonds(or Walnuts)
    2 teaspoons Baking Powder
    1 teaspoon Cinnamon
    1/4 teaspoon Ginger
    1/4 teaspoon Nutmeg
    1/4 teaspoon Salt
    1/4 cup Diced, Candied Orange Peel

    Preparation Directions:
    Pre-heat oven to 350 degrees.
    Sift flour with Baking Powder, Cinnamon, ginger, nutmeg and salt and set aside.
    In a large mixing bowl, beat butter and sugar until fluffy.
    Beat in egg and pumpkin.
    Stir in flour mixture.
    Add in nuts, orange peel and raisins, mixing well.
    Drop rounded teaspoonful of dough onto a cookie sheet.
    Flatten slightly with spoon.
    Make 20 minutes.

    Serving Tips and Suggestions:
    Sprinkle lightly with Confectionery sugar.
    Add candy sprinkles before baking.
