    I have a glut of pumpkins growing (approx. 12) I will give some away to the childrens home for halloween, but does anybody have any good pumpkin recipes?

    Here's the Algarve recipe for Pumpkin Jam which is served as a starter with goat's cheese. The instructions for preparation are verbatum to the book! :D

    Doce de Aborbora Chila

    1 Pumpkin (or Squash)
    Sugar (the same amount as the boiled Pumpkin)
    1 stick Cinnamon
    Salt

    Break the pumpkin by hurling it to the ground (do not use a knife as this spoils the taste of the jam). Separate the various pieces by hand leaving the rind. Remove the core and seeds making sure not to leave any yellow fibres behind and taking care not to touch the pumpkin with anything made of metal. Scrub the pieces well in several changes of water until there is no scum left behind in the water. Leave overnight in clean water.

    Cook the pumpkin over a high heat in an enamel pan, adding the pieces gradually to the boiling, salted water. When the rind comes away easily, drain the pieces. Then dip them in cold water and remove the threads as well as you can by hand.

    Use a cloth to drain the pieces and weigh them. Weigh out the same amount of sugar. Add a little water and cinnamon and cook until a thick syrup forms (115oC). Add the pumpkin and boil, stirring continuously until you can see the bottom of the pan.

    Pour into jam jars and cover with cellophane.
