Quick Onion Marmalade..

    [​IMG] Quick Onion Marmalade

    Preparation Time: 5 minutes
    Cooking Time: 10 minutes

    Serves: 6

    Ingredients

    1 kg (2lbs) onions
    2 tbsp oil
    5 tbsp red wine vinegar
    100g (4oz) brown sugar
    Variations: add mustard, tomato puree or Cumberland sauce. Red onions are even better.


    Method.

    This one is a doddle to make, keeps well in the fridge and adds zing to simple any simple vegetarian or meat dishes.

    Chop the onions and gently fry in the oil until they a quite soft. Turn the heat up to dry them off and add the red wine vinegar and the sugar. Continue to cook, stirring frequently until a little sticky.

    You could try some of the variations as well for different dishes. [​IMG] Enjoy.....

    I'm sure it is Marley. And I certainly intend to make some (with red onions - far sweeter). Any idea on shelf life, sorry fridge life? Might have to use the old sterilized, screw top jar routine. I'm brilliant at it. Tried it on Boss lady but it didn't preserve her. [​IMG]

    [​IMG] :D You are a bit of a devil I think John.... [​IMG] :D

    I don't find it hangs around very long in the fridge, so I just make a small batches as I need it usually, because it is so quick to make, but yes do sterilise your jars first..... ;) :D

    Yum Marley,

    What is Cumberland sauce, can I sterilise jars in the microwave and using your measures how many jam jars would that roughly fill?

    I'm a vege and LOVE onion chutney.

    Cumberland sauce;-

    300ml (�½ pint) Port
    4 tbsp Redcurrant Jelly
    1 Orange
    �½ Lemon
    1 tsp Orange Rind
    1 tsp Lemon Rind
    1 tsp cooked Shallots
    1 tsp Mustard
    Cayenne Pepper
    Ground Ginger

    Soak the finely chopped rinds in boiling water for 2 minutes and allow to cool.
    Squeeze the juice from the orange and lemon.
    Combine all of the ingredients, seasoning with pepper and ground ginger to taste.
    Serve with venison or lamb.

    This is the luxury version. Adapt to taste. [​IMG]
