Rabit Stew.

    3 rabits
    5 potatoes
    2 carrots
    5 mushrooms
    2 onions
    2 oxo cubes
    cooking oil
    tbls butter
    salt,pepper.
    water.
    Skin and clean rabits. Pre heat oven to 120`C gas mark 1/2.
    Put rabits in a large oven dish,rub some oil onto skin,sprinlke with salt and pepper,pour in a little water and cover with tin foil.Cook for about 3 1/2 hours.
    When rabits been cooking for about 3 hrs peel and dice spuds and carrots and par boil for about 10 mins.While those are boiling fry(lrge f.pan) mushrooms and onions on a fairly high heat to brown, in oil and butter.Turn flame low, then sprinkle in oxo cubes.Drain carrots and spuds and mix into frying pan.
    Take rabit out of oven dish (keeping the juices),and take all meat from bones and add to frying pan.Pour over juices and simmer for about 10 minuits.
    I made this last night and its a delicious winter warmer. [​IMG]

    I like rabbit meat, although some people see rabbits more as pets than food, but then, is it any better to kill a lamb, a piglet or a chicken to eat it? Plants are also living creatures, for that matter.

    Rabbit is available here permanently, at the local markets, butchers and supermarkets. You can buy them ready prepared, ie....skinned and cut up, whole or halved.... OR you can buy them (market) and do it yourself... the only thing I would add to the recipe is strips of bacon ( because I can't get bacon here, I use local cured ham or palma ham...... )........mmmmm ! it's made me hungry.
