Ratatouille HELLPPP!!!!

    After seeing the film, the little Darlings have requested I cook them a Ratatouille. I cooked one YEARS ago and it was [​IMG] [​IMG] [​IMG] !!!

    Does anyone have a fool proof recipe I can do for the horrors???!!!

    I have several recipes but I usually just make it out of my head, so sort of a jumble of all and never any set amount of anything either.

    Prepare:

    aubergine
    courgettes
    red and green bell peppers
    onions
    tomatoes (you can use fresh or tinned)
    garlic


    Sautee all.


    Season with:

    salt and pepper
    a little basil
    olive oil


    I usually make up a big batch and freeze several portions.

    I like it cold best but Hubby likes it hot. Hope the kids like it.

    Mine is the same as yours KG. I do however skin the sweet peppers (best done after charring them over a gas flame, stuck on a skewer, if you don't have a chef's blow torch, or you can get tinned but they are a bit 'mushy'. Also the tomatoes (if using fresh) using the boiling water method. Fortunately my 'little horrors' are grand-kids ;) :D (if I'd have known I'd have had them first) and they usually complain if there is skin on anything.

    John is right Honey Bee, skin the tomatoes and paprika first. I only skin the tomatoes though.

    I take things like that for granted, thinking everyone knows it.

    we are in a "trout" period at the moment...
    I put them in the oven, but I always seem to cook them too much and they become dry. Hopefully one day I will get it right...

    Mira - wrap them loosely in aluminium foil before you put them in the oven.

    Mmmm KG. With a knob of butter (OK steam them if you must - I'm a pig. Whooops I mean gourmet :D ) and either herbs to taste (especially dill or something else aniseedy) or some almonds. I think you and I cook the same way.

    Whenever I use sweet peppers in cooking, I never skin them (?????) Even raw, the boys just tuck in....
    I'll try unpeeled first, as if they eat it like that, it will save a bit of time!!!! And the tomatoes will come out of a tin!!!! [​IMG]

    I'll give it a go at the weekend - thought I might serve it just with a crusty loaf or sausages?

    How's about crusty bread and sausages. But if it was my grand-kids you'd have to skin the sausages too. [​IMG] :D
