Re freezing Beetroot

    I am up to my neck in Beetroot! I grew Cylindra this year and extremely pleased with the results. I think this variety is sweeter than the more commonly available Boltardy variety that I have grown in the past.
    I have cooked and frozen Beetroot in the past but then used it as a side vegetable served hot. Has anybody frozen cooked Beetroot, then defrosted and pickled it?
    I have already pickled about 10 jars and have run out of jars, vinegar and cupboard space! I don't want to leave the remaining Beetroot in the ground for much longer as they will go woody but not too sure even I who love Beetroot can eat all of what has been produced as a side vegetable so hoping I can freeze and then pickle after the ones already pickled have been used.Thanks.
