Red Cabbage Recipe

    Hi, i was just wondering if anyone had a tried and tested red cabbage recipe i could do to prepare for my christmas dinner, hopefully one i could freeze and bring out when required. I have got one out of recipe books but i do like on that others can recommend. Thanks

    Hello, sharon. I love a good red cabbage but unfortunately t'other half isn't very keen at all. I have tried the following, doing it to my preferences, ie, not putting in the meat. I'm not sure about the freezing however.

    1 red cabbage, trimmed and shredded
    4 tablespoons / 1/3 cup red wine vinegar
    60g/2oz/1/4 cup dark brown sugar
    375g/12oz/3 cups sliced onion
    60g/2oz/1/4 cup lard or bacon fat
    375g/12oz peeled, cored and sliced cooking or sharp eatig apples
    4 cloves or 1 level teaspoon ground cloves
    bay leaf
    300ml/1pt/2-1/2 cups water or stock
    75ml/1/2pt/2/3 cups red wine (optional)
    500g/1lb piece smoked bacon, belly, rind and bones included
    salt and pepper

    Mix the cabbage with the vinegar and sugar. Brown the onion lightly in the fat in a large pan.
    Layer in the cabbage and apple, adding the cabbage juices, cloves, bay leaf and seasoning.
    Pour in the water or stock and wine, if used.
    Push the bacon into the centre.
    Cover tightly and simmer as low as you like, either in the oven (150oC, 300oF, Gas 2) or on top of the stove for 3-5 hours, stirring occasionally. Remove the lid toward the end if there is too much liquid in the pot.

    As stated, t'other half doesn't like such so I cut quantities down and don't use the meat so mine cooks in about an hour. You can chill for several days.

    You need my sister, Kedi-Gato from Germany, to give you hers, but I don't know when she will be on GC again as she is not broadband. I will direct her to this question should I see her about.

    �½ baby red cabbage, finely shredded
    2 tsp thyme leaves
    2 tbsp soft brown sugar
    glug of red wine vinegar
    1 tbsp honey
    splash of red wine .....I like a large splash !!

    heat a medium saucepan. Heat the cabbage with the thyme leaves for 2-3 minutes. Add the sugar, vinegar, honey and splash of red wine. Allow to simmer for 18-20 minutes, stirring occasionally.

    This is a very quick way to cook red cabbage, and I have not frozen it .....but there's always a first time ! :cool: M-L

    Thanks for that, someone told me they once lost their red cabbage when their freezer broke and thats where i got the idea, think i will try a small batch and freeze one lot and try it like that, my husband is so looking forward to this.
