redcurrants

    just been out picking my redcurrants, before the blackbirds have the lot!

    I've got 5lb and was wondering if anyone else had any receipes to use them in? I will make some into jam but i'm still eating last years batch so was hoping that i could use them in other things too. any ideas????

    Have you tried a flan yet? Put pudding or custard on a flan, sprinkle sugar on it to prevent a skin from forming, and then put the red currants on top.

    I prefer making jelly to jam with the red currants. It does involve a bit more work straining the juice out but then you don't have all those pips getting stuck inbetween your teeth.
    I boil the currants up with a little water, let them soak for a half an hour or so, mash down with the potato masher and then strain the liquid off.

    A very tasty mix is to use part red currant juice and part orange juice. It is worth trying. Another tip, the juice freezes well if you don't have time to use it immediately, likewise the berries.

    My nextdoor neighbour handed in a punnet of redcurrants - I've just been eating them 'raw' - but really need to find something to do with them (really don't have the whitherwithto to strain out the pips from jam - but had thought about stewing them and just eating that way!

    Thanks for your suggestions Kedi - a bit more inspiring than mine!

    You surely have a fine sieve JarBax, that's what I use to strain them with. Mush them down through the sieve a bit to get the pulp too, using the back of a large spoon or soup ladle.

    thanks kedi- made a flan as suggested and it went down a treat. also made jelly instead of jam this year and although it is more work seiving it, it saves time taking all the stalks off in the first place. I've ended up making jellies and not jam out of all my fruit this year!!

    just on with the gooseberries now but got a couple of pounds spare so making a tart out of some and a fool out of others (sounds like i'm leading them into a life of debauchery and tomfoolery!!!) :D :D
