rhubarb receipes

    any ideas on what we can do with our rhubarb that doesn't require an oven??? Our oven has bitten the dust :mad:and we're waiting for a new one to be delivered and in the mean time our rhubarb is looking very tasty!! we've had rhubarb fool so far but i'm sure there's more we could be doing!!!:thumb:

    Rhubarb and figs make a lovely jam too! And no the proof is not in the eating and running, although you would have thought so with that combination wouldn't you?:)

    thanks all, going to look into the cocktail for definate!!! had already considered jam, both the suggestions sound lovely but i've got 2 things stopping me going down that route.1. sterilising the jars - i usually do this in the oven, can it be done otherways, preferably without the sterilising fluid, I can't put it in the metal sink supposedly?? 2. I still have 14 jars of last seasons jam and the soft fruits season is fast approaching! so, i'm going to check out the website suggested, it looks just the place i needed!!

    do you have a microwave? my aunts mums crumble only sees the oven to warm it up before dinner but manages fine without one!
    She cooks the rhubarb with the sugar/golden syrup in microwave and makes the crumble mixture and cooks that under a grill... thats it and its always delicious!!
    Otherwise a rhubabr compote is delicious - just cooked rhubarb and apples on the hob - add sweetner as you like (honey/Golden syrup/Sugar) with a dollop of ice cream... mmm yum!
    You could also add a little ginger stem grated to the rhubabr when cooking it for compote and replace the apples with mangos...
    o my I love rhubarb!!!!

    thanks ellenw - sounds good, especially the compote's! with the crumble - the grill went with the oven i'm afraid! we are using a camping stove at the moment, its great fun!!!

    I've managed to find the Bellini recipe, which you can still create even if you are still just using the camping stove.

    For 6:

    300g rhubarb - trim & finely slice.
    75g sugar
    Bottle of sparkling wine of your choice.

    Method:

    Add rhubarb, sugar and a couple of teaspoons of sugar to a small pan.
    Place lid on top and bring to the boil for two minutes.
    Remove the lid and simmer with the occasional stir to get a thick compote.
    Then blend to a smooth puree.
    Once it has cooled, stir it and divide it amongst the glasses.
    Pour your bubbly into the glass and stir as you do.

    Sit back and enjoy!

    How about using it to flavour a cheap bottle of spirits, a bit like sloe gin? Rhubarb contains a lot of water so sould be ideal for this....not something I've tried but your post set my mind turning. You could experiment with a few small sterile jars packed with Rhubarb, perhaps add different spices, ginger, cinnamon, cloves all spice etc....top up with gin/rum/vodka, leave somewhere for a few months, strain and sweeten to taste. Make a note of what you've done. Mmm...dark rum, Rhubarb, Ginger and black treacle? Rich and spicey.

    Don't be scared to try stuff for yourself.

    Rhubarb chutney - it is delicious.

    If you Google it you will find a lot of different recipes.

    Rhubarb and Ginger jam....
    Rhubarb and apple compote...

    Yum yum I love rhubarb...:)

    Rhubarb and apricot is a delicious jam mix that is worth trying when you get back to making jam.

    Scotcat - rhubarb and orange jam sounds great. How much of each do you use, please?

    beanie - great link, I have saved it to Favourites and shall definitely try some of the recipes out. Thanks!

    Make sure you never cook rhubarb in an aluminium pot.

    thanks all, great ideas..... I've found a great one too.

    1. pick the required amount of rhubarb needed to make at least 2 crumbles.

    2. wash thoroughly.

    3. take them down to my mum's house so that she can make 2 crumbles, 1 for her and one for me!!

    4. enjoy with custard!!
