Don't pick more than a few stems on the first year K9max, the plant needs to build up a good root system so it needs the energy from the leaves. They are ready to pick when the stems are about 1" thick, but you could pick smaller stems, if you wanted tender less stringy rooob.

Leave it mostly alone this year, mulch it with rotted orse manure in the winter & it will crop for decades.

Not sure how old your plants are K9max.
If you only planted them this year then you can take a few stalks when you like but don't take too many and let the plant establish.
If the plant is older than that then take all you like whenever you like.
The early rhubarb is best - sweeter and less stringy.
Unless you are a rhubarb fanatic, or want to make jam with it, I find 2 plants gives me all the rhubarb I can use and some to give away, and a bit for the freezer as well
