Rice Pudding.

    Has anyone got a really good recipe for rice pudding? :)

    I use Delia's recipe but it doesn't turn out like the stuff from a tin. It is a lot tastier but a lot stiffer. You could use more milk and experiment. Cheers, Tony.

    Mine is basmati rice (unwashed), coconut milk, palm sugar and green cardamom pods. Add some freshly grated nutmeg too if you wish. Put it in a saucepan and cook on a very gentle simmer (stops the coconut milk splitting) until the rice is tender. If it's drying out add ordinary milk and a little creamed coconut. When the rice is done I sometimes add some chopped fresh fruit (such as lychee or mango) and cook for just a minute more. Remove the cardomom pods before serving.

    I like the one from the tin - I use half milk, half Carnation milk - gives a similar creamy taste.
