Salcita de Jitomate (Tomato Salsa)

    Here's our favourite Mexican salsa. It makes about 600ml / 1 pint.

    8 ripe firm tomatoes, chopped finely*
    Handful of fresh coriander, chopped finely
    1 onion, chopped finely
    4-6 chillis, chopped finely (Jalepeno are best)
    Juice of 1 lime or lemon
    1 teaspoon salt
    1/2 teaspoon ground black pepper

    Simply mix all ingredients together thoroughly. Serve cold as a dip or warm slightly to put over grilled meats.

    * You can substitute fresh tomatoes with tinned.
