Savoury Clafoutis

    Another recipe for all those tomatoes ...

    Savoury Clafoutis

    500g sun-dried tomatoes
    Salt and freshly-ground black pepper
    Few sprigs of thyme, leaves removed
    3 medium eggs
    40g flour
    200ml single cream
    2 tbsp freshly ground Parmesan
    Olive oil for greasing
    Basil leaves, chopped

    Pre-heat oven to 175oC / gas mark 4.

    Cut the tomatoes into small pieces and sprinkle with a little black pepper.

    Whisk the eggs together, then add the flour and cream and season to taste. Add half of the Parmesan and beat well.

    Grease an ovenproof dish, pour in the batter and arrange the tomatoes on the batter. Sprinkle the remaining Parmesan on top.

    Bake for 35-40 minutes or until the sides have risen and the batter appears a light golden colour. Scatter basil leaves on the top.

    LoL, popped into morrisons today got all the ingredients for your lovely recipe making it tommorow sometime for friends coming thursday will it be ok, to leave refigerated until thursday or should i make it thursday morning. [​IMG]

    It's okay to do in advance and leave refrigerated because you can eat it hot or cold. You can just pop it in the microwave for a minute to warm if you do in advance.

    PS I'm a very much a "do in advance" person ... gives you more time with friends, which I think is important rather than slaving away in a kitchen!

    LoL have made it due to come out of the oven about 1 it smells delightful, had a little taste of the batter and it is lovely.
    got 2 french sticks so im doing one with garlic and the other with sun-dried tomato paste, sliced and spreaded then cover them with foil and blasted in a hot oven until crisp edges and fluffy soft in the middle. yum yum [​IMG]

    Smells good from here, Rosa! I forgot to say you could add a touch of garlic but with your garlic bread, that's A-OK! What time are we eating? :D

    Had a taste LoL it is lovely had a plate of it and gave my friend some so i have enough for tea tommorow after a few of these [​IMG] [​IMG]

    Glad you enjoyed it. I just sliced some tomatoes up and put them out in the sun to dry so will do one myself over the weekend when the tommy-toes are ready, yum!

    I've got a trayful of them (Spanish toms) on the roof of the breadoven which I can keep my eye on from the kitchen sink. It's in the kitchen patio ... must take a pic of it and post in my gallery.

    I thought Morrisons were supposed to be one of the cheaper stores! My toms were 79c (56p) for a kilo bag and I've probably done half of that so around 1lb for 28p!

    they were sun-dried tomatoes in fancy tubs thats why they were dear. [​IMG]

    Just took some pics of mine drying ... have to wait till t'other half has had his snooze so he can download onto his computer and transfer to me. We're 34C today so we're staying in keeping cool! [​IMG]

    Just watched Globe Trekker on the Travel channel. I watch it most afternoons, like Ian Wright in particular.
