You could add extra cheese or use a strong cheddar for extra taste ..if you use a red cheese it will give your scones more colour..here is a simple recipe..

    Cheese Scones
    Ingredients:
    150g (6oz) Self Raising Flour
    1x2.5ml spoon (half tsp) salt
    pepper and mustard
    25g (1oz) margarine
    75g (3oz) cheese grated
    1 egg
    30ml (2tbsp) milk
    Method..
    1. Mix flour and seasonings, rub in margarine
    2. Stir in Cheese, reserving a little for the tops
    3. Mix to a soft dough with the egg and milk reserving a little to brush tops
    4. Roll out to a round just over 1cm (half inch) thick cut into 8 Triangles
    5. Place on greased baking tray brush with egg and milk and sprinkle with grated cheese
    6. Bake in hot oven 222c 425f Gas mark 7 for 15mins

Go tme thinking my late Mum was always in her kitchen baking she enjoyed cookign but her forty was baking.

I inhereted her book with hand me down hand written recipes.
    Yours is very simalar wildflower.
    Here is Mums

    1egg and milk
    1 cup of S.R flour (4oz)
3oz grated cheese of your choice
    3teaspoons of baking powder
    Salt and Pepper

Bake in a medium oven for 20 mins .

Cut open an butter on both sides with a slice of tomatoe.

Wildflower just copied her recipe word for word as she had it.

Happy to pass on some of her favourite recipes.

This has brought back some memories got a wee tear I am still a bit raw.

Specially as its gettign near to xmas.

Her baking skills really did no trub off on me can make th escons its the thinkness just can get them thick.

My sister in law buys scone mix in bulk dont know where she gets it but its for quickness with her.

Have you been to Dobbies coffee shop in the garden centre an dtasted their wholemeal apple and cinnamon scones they are so good.

Wish I had a recipe for that.

I use blue cheese, usually Roquefort, and it gives them a 'bite' .. I also find that NOT rolling out the pastry helps ...I pat it out but leave it quite thick then cut out the scones; I get less in the number of scones, but more volume in each individual one :D mmmmmm!!

Chopped up prunes, figs, dates can all be added for a change ....

    Bon Appetit : M-L

Its easy to make apple and cinnamon scones just cook a large cooking apple chopped up ..then mash or puree it and wait till its cool ..add the apple and a tea spoon of cinnamon to the basic scone mixture..and sprinkle the tops of the scones with cinnamon and sugar before you bake them..roll them out to 3/4 inch thickness..you can serve them with more apple and fresh cream..

A variation on Wildflower's apple and cinamon scones is to simply dice an uncooked apple and add it to the scone mixture. Baking cooks the little chunks and you end up with a scone with lots of sweet surprises inside.
