Shobhna's mint chutney

    In case any of you have missed Shobhna's mint chutney recipe (hidden away in Capney's thread about his potted herbs!) here it is again:-

    Here's how I make Mint Chutney

    two large handfuls of mint leaves.
    1/2 a bunch coriander leaves with the stalks (the ones I get from my local market are huge bunches...ie..you can just get your hand round the tied bunch.)
    couple of green chillies or more if you want the chutney to be hot.

    blitz it all in a liquidiser with water but do not add too much water or the chutney will be very runny...so careful with the water but you will need some to get the process started.
    juice of 1 lemon.
    2 teaspoons of sugar
    salt to taste (about 1/2 or just less then half teaspoon)

    It is nice with samosas.
    I like it in a sandwich .. cheese and mint chutney sandwich.
    Gets eaten up pretty quick with the papads (papadoums to you!) as well.

    You can also add a tablesppon of it to a salad made with
    1 fresh red onion
    2 tomatoes (deseeded)
    1/2 a cucmber.
    dice it all reasonably small, add the chutney and mix well.
    yummy........
