Speedy Lamb & Spinach Curry

    Speedy lamby curry ingredients.

    1/2 tsb cumin seeds
    2tsb sunflower oil
    200g lean lamb steak, cubed
    1 red pepper, deseeded and sliced
    1 green chilli
    2tbsp mild green curry paste
    225g can chopped tomatoes
    160ml can coconut cream
    100g bag baby spinach
    1/2 a 20g pack coriander chopped

    method
    dry fry the cumin seeds for 20 secs in a wok
    then add oil and stirfry the lamb for 1 min then take out lamb and put in a dish
    add rest of oil to wok fry pepper, chilli stir in curry paste tomatoes and coconut cream off tomato can put in half can water.
    simmer for 5 mins
    then add the lamb, spinach and coriander and simmer for 2 mins till coriander is wilted

    thats it done a quick curry, im making this for xmas eve, enjoy!!!

    Sounds yummy, anything with curry is fine in my books.

    I've read a few articles recently about the health benefits of curry. Scientists have taken a great interest in curcumin, a chemical in turmeric (the spice that gives curry its yellowish colour). Aparently it tells cancerous cells to self destruct, this potentially reducing the risk of cancers of the digestive tract. A seperate study a while ago found hints that its antibacterial and antviral properties reduce the risk of infections in the bowels which might otherwise contribute to the risk of bowel cancer.

    I've also read that capsaicin, the chemical that gives chillis their hot taste, does some sort of chemical magic (that is way beyond my understanding) to certain types of fat and scar tissue in the arteries, improving the condition of the arteries and improving blood circulation.

    I don't know if any of these studies have proven anything conclusively yet (I'm not a scientist so don't understand half the articles I read), but these things have got to be a bonus for us curry fans.
