Spinach and Leek Pie for Whiley :D

    Serves 4 257kcals each

    I medium onion chopped
    20z leeks chopped
    1 veg stock cube
    10oz spinach
    1 tsp dried oregano
    1 egg beaten
    250g low fat cottage cheese
    200g filo pastry
    sunflower oil spray
    salt and freshly ground black pepper

    put onions and leeks into a large pan
    stir stock cube into 31/2 fl oz water
    cook over a medium heat until veg tender (about 10 mins)

    Meanwhiley (sorry couldn't resist that :D ) trim stalks from spinach leaves and wash and drain well. Shred and add to pan, cook for 2 mins until wilted. Tip into colander and press out any liquid.

    Preheat oven to 200c/400f/GM6

    Put veg in a bowl, add the oregano, beaten egg and cottage cheese. Season well with salt and pepper and mix well.

    Spray shallow tin (approx 8x10"), with the oil.
    Add a layer of filo pastry, lightly spray nad add another, repeat once more making sure pastry goes up sides of tin.

    Pour in the veg mixture and add another three layers of filo pastry spraying as before allowing the last layer to ruffle.

    Fold down the sides of the pastry and bake for 30 mins.

    Cut into 4 portions and serve immediately.
