Spr. Onion and Peapod soup

    Bought a bunch of spring onions for 1p.
    Pea pods from the freezer.
    2 potatoes
    Risotto rice, left over.
    Spinach stock water
    Chicken stock cube.

    All vegetables cut small, and stir fried in olive oil.
    Sweat off the vegetables with lid on pan.
    Add stock and water, and cook until soft.
    Whizz with blender, I then pass through mouli mill to make sure its smooth.
    Salt to taste. Add a dash of single cream to serve.
    This is what I call my soup a la cheap.

      I have bought yesterday a ready made carrot/coriander soup and to make it more tasty I have added courgettes, spring onion a little pepper and mozzarella... I have yet to decide if it taste nice, what do you think? (it does look a bit gluey because of the mozzarella)

      I've got some leftover roasted vegetables which I'll add to stock and whizz up for soup.

      I love soup!

      OOh Mozzarella, but I would not put in a soup,:eeew: maybe some Grana Pandano.:yes:

      Mozzarella on toast, yum with some pickled artichokes, capers and olives, now your'e talking.:hapfeet:
