Stilton, Celery & Apple Soup - a winter warmer

    Stilton, Celery & Apple Soup (a great cold weather warmer)

    25g â?? butter
    1 onion â?? chopped
    3 celery sticks â?? chopped
    1 tbs â?? plain flour
    150ml (1/4 pt) â?? dry white wine
    600ml (1 pt) â?? veg stock (cube)
    300ml (1/2 pt) â?? milk
    Bay leaf
    2 cooking apples
    150g â?? stilton cheese

    Gently fry chopped onion and celery in butter, stir in flour.
    Add wine and veg stock â?? stir until thickened.
    Add milk, bay leaf, chopped apple, salt and pepper. Bring to boil. Simmer for 30 minutes.
    Crumble in stilton and stir until melted.
    Hand blend and adjust seasoning to taste.

    Quantities are not critical and neither are some of the ingredients. Iâ??ve just made some using retsina wine,self-raising flour, some of our stored eating apples and blue stilton and it tastes darn good!

    :wink:...Looks rather lush!....If I get the same present of my Dad this year...selection of cheeses:dh:...I will give it a go:)
