Storing harvested Apples

    How should I store by harvested apples in autumn please.

    I press the juice from 80 - 90% of mine and pasteurise it for drinking or fermenting, dehydrate/vacuum pack some, freeze some cookers for subsequent cooking, use some in chutneys, and some are stored in cardboard boxes lined with cardboard/polystyrene fruit shaped inserts (gleaned from supermarkets) in an unheated room (we have a friend with a North facing ex-butcher's shop, which is about as good as you get!) until they start going soft, then they are used i cooking.
