Storing potato skins

    I hate waste. Every time I peel the spuds for dinner, I put the peelings in the compost bin but I seriously begrudge doing so. Deep fried tattie skins are lovely, especially when livened up with garlic and herbs.

    The trouble is, if its mash for dinner, you can't have fried skins as well.

    The other trouble is, once you peel a spud, the air gets to the inner flesh and it goes black and horrible. Raw spuds don't freeze well and the old trick of leaving them in water to stop them going black also makes them horrible.

    So how do you store tattie skins for later use without them going horrible?

    Mrs Scrungee always oven roasts potato skins and has kept skins in a bag with oil & seasoning in a polythene bag in the fridge for a few days awaiting baking day.

      I'm happy that they contribute to the compost I make :thumb:

      But I agree ... all veg that I have lovingly grown that is cut off and put in the compost bin is an annoyance : "I GREW THAT FOR YOU" type outbursts are common!, and I get apoplectic if any home grown veg is thrown out rather than eaten - whereas for shop-bought I only get extremely annoyed :D

        I do not know, but Scrungees answer seems pretty good

        Can you not cook then deep freeze, I mean you can buy frozen pre cooked chips and potato wedges ?
