Storing potatoes

    What is the best way to store potatoes?

    At this time of year, leave them in the ground i.e. only dig up as many as you need.

    If you need the space and have to dig them up, store them in a paper bag in a cool dry dark place.

    Later in the year with maincrop spuds, make sure you cut down the tops and leave them in the ground for at least a week. That helps toughen up their skins and makes them store longer.

    If you have lots and lots of maincrop spuds you can make a 'clamp', which is a method of storing them under-ground over winter, but I don't know anyone who does that these days.

    Let the air get to them somewhere cool and dark so their skins dry out and harden.

    An old farmer once told me that you should lay out a bed of straw, then put a layer of spuds on it, then another layer of straw, then spuds again and so on. Needs to be somewhere cool, dark and dry though so they don't rot or try to grow.
