Sugar used in Asian cookery

    What's that sugar called that is used in Indian cooking?? I can't remember it's name, think it starts with the letter K.

    What branch of Asian cookery? In Thai and that sort of regional cooking, Palm sugar is commonly used. Up until recently you'd need to visit an Asian grocer to find it but you can buy it in Waitrose now.

    Indian, I has it's own word ie-it isn't BLANK sugar

    it is definitely something else.

    Khand or Khandav or even Khandsari ?? maybe

    It's not Jaggery is it? My Indian friend tells me that's a solid block of sugar which they grate, but she's not aware of a sugar beginning with "k".

    Jaggery is the word-thanks a bunch. It's been driving me potty not being able to remember it.

    The Khanda is a kind of sweet toffee.
