Sweet and Sour cabbage salad

    SALAD
    1/2 Green Cabbage, finely shredded
    1/2 Red Cabbage, finely shredded
    1 Carrot, peeled and finely shredded
    2 Shallots, peeled and finely shredded
    2 Thai Chillies, thinly sliced (deseeded, if you prefer)
    1 Celery stalk, thinly sliced
    small handful of Thai basil
    small handful of Mint

    DRESSING
    juice of 1 Grapefruit
    juice of 2 Limes
    2 tbsp fish sauce
    2 tbsp granulated sugar
    1 tbsp vegetable oil

    Place all the ingredients for the dressing in a bowl and whisk together until the sugar has dissolved. Ideally, prepare the dressing a few hours in advance so that the flavours can develop.
    In a large serving bowl, mix together all the salad ingredients. Pour in the dressing on top and allow to sit for up to 1 hour before serving.
