Did I do something wrong? My sweet peas have been grown pods rather than flowers for the last month or so. When in flower, I was picking about half the flowers every day and leaving the other half. Should it not still be flowering?

Pick the pods immediately, the pods tell the plant "Mission accomplished" its finally set seed so no need to grow anymore flowers.

When I pick sweet peas I pick all of them except for thos that are not fully in bloom, I pick every two days. Ones with twisted stems are also picked and discarded.

Yes as Steve says you must pick all flowers very regular .I grow mine singly as cordons removing side shoots and tendrils then like Steve pick every other day..Yo can leave a few to set seed at the end of the season for seed ...
