How big should swiss chard leaves be before you harvest them? Mine are between 6 and 10 inches long now?

Chard leaves should be green, not browning or yellowing. If they are wilting, then they are past their best...so go for it.

If you leave the leaves to become too big, then the center vein or stem, will require more cooking than the leaf, so best that you cut the center vein out and start cooking that before you do the leaves. Gotta say though most leave them to be about 12 to 18" before cutting. Depending upon when you planted them, they can be havested from late spring right though till Autumn...providing you do not cut the centre part of the plant. You leave that to produce more growth. Use a sharp knife when cutting the stems. :thumb:
