"Taste of Summer" Vinaigrette.

    Here's my taste of the summer vinagrette, I was given this recipe when I was a chaf at an exclusive restaurant catering to the rich and famous, celebrities and Royalty alike.

    100ml Raspberry Vinegar, "Dufrais" is the brand I use.
    100ml Olive Oil, "Olivio" Extra Virgin is what I use.
    2ozs Sugar *Advice* Add sugar a bit at a time, 2 ozs is the extreme limit before the vinaigrette becomes a pudding :D
    1-2 Desertspoons of Mustard. Can be Dijon or Wholegrain, I use the latter.
    Season using a black pepper mill set to larger bits.

    The classic way to make this is to whisk the mustard and vinegar together and then whilst whisking drizzle in the Oil, when all the oil is added then you can season with the pepper and finally sweeten with the sugar.

    The easier way is to place the mustard, vinegar and oil in an airtight jar and shake vigourously until blended, then season with the pepper and finally add the sugar to taste.

    Optional extras: Crushed or chopped fresh tarragon or coriander can be added for an extra kick, but dont overdo it. The overiding taste should be one of fresh Raspberries, slightly sweet, and sour.

    That sounds great, I have a friend who makes his own fruit vinegars so I will try it with one of those:thumb:
