tea bread

    i used to make tea bread but have lost the recipe,it used to be a cup of everything but what i cant remember.and it was easy to make.can anyone help[ me

    Hi duckyjuk, could you perhaps mean Bracken Bread? If so, then I have this recipe from my Auntie. It is in ounces and not in cups, but it is a very easy one. Here it is:


    Bracken Bread

    8 oz. mixed fruit
    6 oz. demeran sugar
    8 oz. cold tea

    Mix and leave overnight.

    1 egg
    10 oz. SR flour

    Add beaten egg and sifted flour to the other ingredients.

    Bake at 135�°C for about 75 minutes.

    135�°C = 275�°F

    thats brill but silly me just found out its electric..hubby went and bought it.i thought it was gas..sorry.

    Never mind, the list will come in handy when the recipe says one sort of temperature and you need another. Since all of the ones over here give temperatures in Celcius I have a little chart giving Celcius and Fahrenheit in my Herb Cupboard for when I use a British or American recipe.

    No, this one is from Auntie and the candied peel one is from my bread-maker recipe book. I think I will put it up too.

    [​IMG] Mrs Roders makes this and I spread thick butter on it yummy...........she also adds chopped apple and glace cherry's,but she calls it Malt Loaf.Just for the record. :D

    Could put on the pounds there, roders my dearest! xx I hope it's "nice" butter? In England I used Welsh or Cornish ... here it's Azorean. I use very little so figure, use the best!

    When you say 8oz of cold tea,Kedi-Gato,does it mean that i can put a tea bag in a measuring jug,pour on hot water to 8oz mark and just leave it to cool.Does the tea have to be a certain strentgh or is it an average cup of tea i`m aiming for.Sorry if it`s a daft question but it`s been on my mind.     Measure out 8oz made tea. Make extra in the morning and let it get cold, saves making it up when you make the cake. Make it to the strength you usually do. Some folk prefer a weaker tea (LofL) and others like it strong (K-G).

    I forgot to say that chopped apple and glace cherries sounds like a good addition roders.
