Tomato Sauce/Ketchup

    Has anyone got a recipe for either Tomato Sauce/Tomato Ketchup. We have loads of tomatos so would like to have a go at making some of the above but haven't got any recipes.

    Kandy, just looked in my Galveston, Texas, book where I thought it may be but no way Jose! I'll have a look through my other American books over the next couple of days and see if I can come up with anything.

    Other than that, make sun-dried (by oven) tomatoes in olive oil (in Recipe section) or Salsa (I think also in Recipes).

    Why do you waste the tomatoes, why not freeze them? ;)

    We have already done that Dag.We just fancied trying something different.I take it you haven't got a recipe then?

    I think you need to go and keep Rosa company while your Bungalow is being knocked about.All that dust....

    Oh sorry Kandy, just sneaked in here while waiting for Pal to come up with another object!

    Did have a recipe a long time ago, but never find it at the moment. ;)

    Well, Kandy, you said I think you said "you need to go and keep Rosa company while your Bungalow is being knocked about." So I thought with his whip, but she said don't bring one because she already had one, so I just said don't forget the "whipping" cream!

    This is funny to me now because the day I met t'other half I was dressed in linen slacks and a silk blouse and he was in jeans and a tee shirt and he sprayed a whole can of whipping cream down the back of my slacks and slapped his hand on it so is squished everywhere ... I was NOT amused! :eek:

    Kandyfloss, if you ask directions to the waiter in any Italian restaurant on how to make a tomato sauce, he will be only too happy to help you. But please don't mention ketchup, because he would be a bit offended.
    But anyway, You can make a very simple sauce by just roasting some onion in a few spoons of olive oil, and then adding some chopped tomatoes and basilicum and salt (maybe pepper and parmigiano when it is served, if you don't find the taste too strong). If the tomatoes are fresh and sweet, they need to cook only a few minutes. If you use tinned tomatoes, I would go for the brand "Cirio".
    I will write more - just for you - about tomatoes in the days to come, as if i remember right, there is a recipes section in this forum.
    PS I just realized I am in it now...

    Thanks Miraflores.We are going to use fresh ones that we are picking each day.I can't stand the things myself...

    LOL what an extrodinary way to chat up someone.I thought only Shiney and Dag were from the swinging sixties as they are about the oldest on here...It's nice to be young.

    Still lost about the Whip.I must have missed a post somwhere along the line.

    I am just off to bed nite nite to you all...

    found one. diana rattray, us cuisine
    Tomato Ketchup

    8 quarts tomatoes
    1/2 cup sugar
    2 tablespoons dry mustard
    1 tablespoon ground all spice
    2 cups cider vinegar
    3 tablespoons salt
    1 tablespoon black pepper
    1 teaspoon ground cloves

    Scald strain through a course sieve to remove seed and skin.
    when the tomatoes become cold add remaining ingredients.
    let simmer for 3 hours.
    pour into hot sterilized jars 1-pint jars ans seal
