Tomato Soup

    I was just reading an American Gardening newsletter I have e-mailed to me and came across this recipe which may be good for those of you with a glut of tomatoes ....

    4 Cups Peeled and Diced Tomatoes
    4 Cups Tomato Juice
    12 Fresh Basil Leaves or 3 Teaspoons of Dried, Crushed Leaves
    125g Unsalted Butter
    1 Cup Whipping Cream
    1/4 Teaspoon Cracked Pepper
    Salt to Taste

    Pour the tomatoes into a large saucepan along with the tomato juice and let simmer for about 30 minutes.

    Add the basil to the tomato mixture, pour into a blender and blend until smooth.

    Return the soup to the pan and add one the butter, whipping cream, cracked pepper and salt to taste.

    Heat the soup through, stirring frequently to allow the butter to melt.


    Sounds good! Too hot here for me to try at the moment but will do later in the year.

    I don't have a glut of tomatoes but I sure am going to try out your recipe soon. I just love tomato soup and a baloney sandwich to go with it.
