Vegetarian Cheesy Sausages

    Ingredients

    • For coating and frying:
    • 25g breadcrumbs
    • 25g grated parmesan (or cheddar if you don't have parmesan)
    • 1 egg white, lightly whisked
    • 2 tsp oil
    How to make it
    • Place breadcrumbs in a large mixing bowl with onion, cheese and herbs.
    • Add mustard and seasonings. Mix together well.
    • Add egg yolk, stir to bind.
    • Divide into 12 portions and roll/squeeze into a sausage shape

    • Mix breadcrumbs with parmesan and dip each sausage into whisked egg yolk then the mix of breadcrumbs/cheese (will keep shape better while cooking if put in fridge to chill after moulding)
    • Fry in shallow layer of oil for 5-6 minutes until crisp and golden, turn then once.


    These are surprsingly good and easy to make. Have tried a double batch and frozen some for later use and was also good.
