I have a couple of smallish Viburnum shrubs in pots a Laurustinus 'French White'and Laurustinus 'Eve Price' (I think) - it is in flower at the moment however some of the blooms are over and are now going or have gone brown. My question is, bearing in mind that they are in pots, is it advisable to pinch off or cut the dead blooms? Will this encourage the plant to produce more flowers apart from the fact that it will look better.

I don't think pinching out flowers will make it continue to bloom as it does when you pinch out perennials/anuals. Mine grow in open spaces, so could not possible do what you are suggesting, however they will get quite large for pots, so you should prune well after flowering to keep thin in check.

I agree, won't give you more flowers, but pruning, or removing dead heads after flowering is fine - they do form berries but I don't find them particularly attractive. .
