Weetabix Cake

    2 Weetabix
    113g (4oz) Sultanas
    142ml (5fl oz) Skimmed milk
    142ml (5fl oz) Water
    113g (4oz) Self-raising flour
    1 Teaspoon of Mixed Spice
    14g (½oz) Artificial sweetener or sugar
    1 Egg (beaten)[/align]
    Method
    (1) Preheat oven to 180°C, 350°F or Gas Mark 4.
    (2) Put the Weetabix and sultanas in a bowl. Pour milk and water over the top and leave to soak up all the liquid.
    (3) Stir in the flour, mixed spice, sweetener and beaten egg.
    (4) Spoon the mixture into a 454g (1LB) lined loaf-tin, and bake in oven for 1 hr 15 mins, until cooked.

    As I read this we have a guest who is forever making cakes and is going to have at your recipe Gogs:)...I'll let you know:thumb:

    I used to have a similar recipe Mary must see is I still have it and it was very tasty.

    That does sound good, Gogs, and very quick and easy too. It is the kind of recipe that I like :thumb:

    I've made a note of it and I shall definitely try it out. I just must get the Weetabix next time I go shopping.

    The lady has now made us a third loaf:dh:....I must remember never to tell a cook you 'just love' something:hehe:
